COCOA FIBRE

Cacao fibre is a natural dietary fibre that undergoes no chemical processing during its production. Derived from cocoa shells, this fibre boasts a robust cocoa aroma, delightful flavour, and a deep chocolate hue. With a fat content below 5% and a high fibre content of at least 59%, cocoa fibre offers a beneficial nutritional profile. Its water and fat-binding binding properties enable the reduction of stabilizers and emulsifiers in recipes, making it a versatile ingredient. 

Globally, the food and beverage industry faces the challenge of addressing concerns surrounding obesity and diabetes due to the recognized health risks associated with sugar consumption. The American Heart Association (AHA) has established guidelines recommending limited added sugar intake, with women advised to consume less than 6 teaspoons (25 grams) and men less than 9 teaspoons (38 grams) per day. The AHA's recommendations for children vary based on age and caloric needs, ranging from 3 to 6 teaspoons (12 to 25 grams) per day.


To tackle the need for sugar reduction in food and beverages, cocoa fibre emerges as a valuable solution. By acting as a bulking agent, it can replace up to 45% of sugar in chocolate products while preserving the desired sensory attributes found in reference products. As the food and beverage industry strives to mitigate the risk of chronic diseases like diabetes and obesity, incorporating cocoa fibre helps in reducing sugar levels.


Insights from a report by Cargill in the United States indicate that certain food categories hold greater significance in terms of sugar reduction. While consumers may be less concerned about the sugar content in indulgent products like candy, categories such as soft drinks and children's foods are at the forefront of scrutiny regarding sugar content.

Cocoa Fiber

 Our cocoa fibre powder is available in three different granulation levels:

  • m10 – fine powder with particles size around 10 microns
  • m20 – standard granulation with particles size around 20 microns
  • m40 – coarse powder with particles size around 40 microns

Cocoa fibre applications:

Cocoa fibre finds versatile applications in various cocoa-based products such as cocoa coatings, "high fibre" chocolate drinks, instant drinks, chocolate bases, extruded snacks, fitness bars, "rich in fibre" chocolate confectionery products, chocolate cakes, muffins, cookies, and other low-fat chocolate-flavoured items.


Cocoa fibre is guaranteed to have a shelf life of two years, ensuring its quality over an extended period. Additionally, the product is Kosher certified, meeting the dietary requirements of individuals adhering to Kosher guidelines.
